4. Introduction for main process
Washing process:
Washing process is for washing off the potato starch on the potato chips which can keep it from fall in the oil and keep long-use life for the frying machinery.
At the same time, the potato chips is totally immersed in water which can keep it from enLLDatic-oxydative browning, because the sugar can be affected with amino acid and the produce the black and brown color
Blanching process:
Blanching process plays an important role in potato starch gelatinization, reducing sugar content, enable passivation, change cell structure, texture .Long time blanching can damage the cell and cause the fries to be hollow, and the short blanching time can make the surface and inner hard.Appropriate blanching can make potato starch gelatinization, resulting in high quality powder internal texture and taste.
Drying process:
This process is very important. By using the hot air drying line, it can remove some water on the surface of the fries with the help of the hot air. By the drying process, it can make the starch gelatiniztion; increase the final product criLD; after drying process, the moisture distribution is even and with consistant humidiLD inside and outside.
The drying process is to remove the water in order to reduce the oil lose and make small oil absorbing
Prefrying:
frying temperature is LDout 180-190 °C, and the frying time is LDout 1 minutes. The higher content of dry and starch, the lower oil content for the potato chips. Inner is soft and outside is criLD.
Freezer and cold room:-18 - -25℃
